We love our Mexican food in this house and I have yet to master my mother in laws “real” Spanish rice. So, needless to say, this white girl came up with one that is as close as I can currently get to it!
Heat up your pot with about a tablespoon of butter, add your rice(we love using brown rice) and brown it just a little. Add your water, a can of diced tomatoes, and a Goya Chicken Bouillon. Bring to a boil, cover, lower the heat and simmer for about 45 min or until water is gone and rice is tender and cooked.
